Meatloaf

This is a recipe that literally goes back to when Kate and I were first married.
It’s been open to this page above a stove for so long it’s barely readable anymore.

Meatloaf

my favorite meatloaf

Ingredients

  • 1 package ground turkey (about 1 1/4 pounds … lowest fat you can get)
  • 2 eggs beaten
  • 1 tbsp worcestershire sauce
  • 1 tbsp horseradish (pure 100%)
  • 1 tsp poultry seasoning
  • 1 tsp dry mustard
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • salt and pepper to taste
  • ⅔ cup bread crumbs

Method

MIX
  1. All the ingredients
BAKE
  1. Heat oven to 350
  2. Heavily coat 8 ½ by 4 ½ by (however tall it is) pan with pam spray.
I prefer glass but I've used thin metal and it was fine.
  3. Press mixture firmly into pan
  4. Bake about 75 minutes.
I usually stick a thermometer in and I'm looking for 160ish.
  5. Let stand 10 minutes!

Notes

Most of the time I “double up” this recipe.
It nicely fills the pan this way and you have leftovers for a day or two.
Optional (very seldom do I add any of these):
* oatmeal (replace bread crumbs)
* ketchup/heinz 57 (either in the mixture or on top towards the end of cooking)
